If you enjoy baking and find yourself craving something chocolatey come the afternoon- this black bean brownie recipe might just be what you’re looking for. 

This recipe is nutritionally balanced, plant-based and quick and easy. It can be added to your weekly meal-prep. Or just as a weekend bake when you don’t want to break away from your plan. All you need is a handful of ingredients from your cupboard and you’ll be good to go. 

Let’s face it, there are times when we fancy some chocolate and savoury snacks. While fruit is generally recommended to satisfy the sweet-tooth, it doesn't always hit the spot. These protein-packed treats are a great solution in moderation, and still every part as indulgent as regular brownies. 

These black bean brownies are super simple. You only need to use one bowl and under 10 ingredients, so they’re minimal work and take almost no time at all. All you need to do is throw everything into the mixer and then bake the batter for 30 minutes. They really are that easy! 

They’re completely plant-based and gluten-free, but still totally fudgy and rich without the guilt. You’d never suspect they’re made from black beans. This recipe contains none of the usual butter, eggs and flour- and with far less sugar than regular brownies. You can also adjust the recipe to your preferences or using what you already have at home.

Black Bean Brownies

Makes 9 brownies

Total time: 35 minutes

Ingredients:

1 tin black beans, drained and rinsed30g cup oats 4 tbsp almond or peanut butter 4 tbsp cacao powder 125ml maple syrup or 125g sugar 1 tsp baking powder 2 tbsp coconut oil 1 shot espresso or 2 tbsp strong instant coffee 80g dark chocolate chips or chunks

Method:

1. Preheat the oven to 180c/350F. Line a square brownie tin with baking paper.

2. In a food processor, blend the oats, black beans, cacao powder, maple syrup, baking powder, coconut oil and coffee. Blend until very smooth.

3. Stir through the dark chocolate, saving a few pieces for the top.

4. Pour the batter into the pan and spread out until even. Sprinkle the remaining chocolate chips and bake for 30 minutes.

5. Allow to cool in the tin before lifting out and cutting into 9 squares.
