Enjoy a bowl of granola but always put off by the sugar content? Or the high supermarket prices? Well, have you ever thought of making your own? 

With this simple recipe, you can prepare your own plant-based granola for the week ahead and enjoy delicious, balanced breakfasts at home or on the go. Even for Sunday brunch, this feels like a treat without affecting your fitness goals. 

This is a nutty granola, with cashews and pecans in the mix- but feel free to add what you already have in the cupboards at home. And of course, mix up your fruit and berries to pair with it. You'll soon make this recipe your own. 

You could try adding kiwi, banana, cherries- it'll go with pretty much anything. The maple syrup gives it a hint of sweetness alongside the nuts - great for pairing with all different fruits. 

All you need to do is mix the ingredients together and bake for 30 minutes. Then, just store in your airtight container and you'll be good to go. 

We love it with coconut yogurt for a super quick and easy breakfast or snack. Or, try with your other favourite plant-based yogurts. You could even try adding it as a topping for your porridge. 

With complex carbs from the oats, this granola won't cause any dreaded energy spikes. The recipe also features a boost of healthy fats from wholesome nuts - slowing down energy release to keep you going until lunchtime. All mixed in with protein-rich quinoa to balance it all out.

Nutty Granola Bowl 

Serves: Makes 12 portions (40g portion) 

Total time: 

Granola ingredients:  

300g whole oats 

25g puffed quinoa or millet (optional, use 80g extra oats if not using)

60g pecans, roughly chopped

60g cashews, roughly chopped 

1 Tsp cinnamon 

100g coconut oil 

110ml maple syrup 

1 Tsp vanilla 

1/2 Tsp salt 

 

Bowl ingredients:

150g coconut yogurt 

80g fresh berries 

½ cup/ 40g granola 

 

Method: 

1. Preheat the oven to 180°C/ 356°F. 

2. Mix the oats, puffed quinoa, chopped nuts, cinnamon and salt in a bowl. 

3. Melt the coconut oil and add to the bowl with the maple syrup and vanilla. 

4. Mix very well to evenly coat the mixture. 

5. Spread out on a large baking tray and press down lightly. 

6. Bake for 15 minutes, then stir thoroughly, press down and return to the oven for another 10-15 minutes until lightly golden. 

7. Remove from the oven and allow to cool in the tray for 45 minutes until completely cool. 

8. Break it up and store in an airtight container. 

Bowl instructions: 

1. Simply assemble the ingredients in a bowl and enjoy!
