Tired of having the same breakfast every day? Well why not mix up your toast with some of these great, plant-based ideas? 

These have to be the simplest ideas and recipes! And, you can mix and match each combo to make your own. 

So, whether you just want a change from your regular toast in the morning, looking for some new options to try or feel like a relaxed weekend brunch- these will be perfect. 

We've gone for scrambled tofu- an ideal source of vegan protein. Just one slice of wholewheat toast with tofu gives 13g of protein.

Protein is an essential component of your diet - helping you stay fuller for longer, and speeding up growth and repair. If you'd like, you can double your portion to up your protein intake. 

You'll want to keep hold of this scrambled tofu recipe. It makes a delicious breakfast with some red peppers, or served with your favourite plant-substitute sausages or as part of a brunch.   

You can also add any other spices you like or prefer to your scramble. Or anything you would add to scrambled eggs. Feel free to keep any left over scrambled tofu in an airtight container in the fridge for a few days. 

The tofu scramble goes with loads of other options. You could try it with some mashed avocado, sliced tomatoes, fried mushrooms- or all of them! 

The classic mashed avocado works well with so many options too. It also provides a healthy kick of omega fats to help boost brain health, lower inflammation, and keep you full. We love ours with some tomatoes for an incredibly quick but tasty breakfast.

Toast your way:

Serves: 1 slice 

Total time: 5-10 minutes  

Ingredients:  

1 slice wholewheat toast

Pick: 

Scrambled tofu: 

80g firm tofu 

½ tsp turmeric 

½ tsp nutritional yeast 

1 tsp olive oil 

1-2 tbsp plant milk of your choice 

Salt and pepper to taste 

OR 

½ avocado, mashed 

Salt and pepper to taste 

Lemon juice (optional) 

OR 

½ avocado, mashed 

2 vine tomatoes, sliced 

Salt and pepper to taste 

OR 

80g chestnut mushrooms, cleaned and sliced 

tsp olive oil

Salt and pepper to taste

OR 

Your own combo of any of the above! Try avocado and scrambled tofu, tomato and mushrooms. 

Garnish with sesame seeds and chilli flakes (optional). 

 

Method: 

Tofu scramble: 

1. Heat the olive oil in a frying pan over a medium heat. Add the tofu and break up with a wooden spoon. Continue breaking up until it looks scrambled. 

2. Add the turmeric, yeast, salt and pepper to taste and continue cooking. Add the milk and cook for 1 minute. Add garnish and serve on toast. 

Mushrooms: 

1. Heat the olive oil in a frying pan over a medium heat. Add the mushrooms with salt and pepper and cook gently for 5 minutes until softened. Serve on toast with garnished.
